I've seen "The City of Death" and a few episodes of Nu Who. Thought they were good, but never bothered seeking out more episodes.

I haven't really seen any of it. I feel like it's something I would like, but there's so much of it that I'm very leery of trying to get into it.

While I do follow the series to a degree I actually don't watch many of the episodes. I usually only watch the "big" episodes.

I've never watched a single episode of Doctor Who. The show is so huge...there are so many episodes and so many incarnations of the good Doctor...that I wouldn't even know where to start.
Also, I tend to either get completely into a show, or not at all. There's no middle ground with me.

That's kind of impossible. Some of the episodes in early seasons are literally gone forever. BBC lost the original footage, and I think this was before the age of home videotaping.
There are also episodes where only the audio survives.

That was a big scandal actually. After colour TV was introduced, the BBC figured that nobody would be interested in black and white anymore and so wiped loads of old episodes to make shelf space (reels and all that). Not just for Doctor Who, but all for their shows. Z-Cars was another classic hit badly by this. So yeah, lots of those old episodes are lost forever. If they do have anything left it's only stills and/or audio recordings.
The new season has been great btw. Peter Capaldi is a brilliant Doctor, the episodes are great, and scary too. Especially the last one there.

@applelight: If I did want to get into the show, what would be a good starting place? There's two points you can start with; either with the Third Doctor (that's John Pertwee, and the oldest complete series) or you could start with the revived 2005 series. I can then fill you in on missing details.
