I'm more curious about how the heck the Coachman manages to keep the racket going. I mean, running the place must cost a ton, and he pays Honest John and Gideon a stupid amount of gold just bring Pinocchio over. Is the donkey market in this setting so lucrative that he can afford to run a free amusement park that literally gives away food, tobacco, and booze? That's actually a good point. Are donkeys really that lucrative?

Theory: the island is magic and existed long before the coachman started taking advantage of it. For anyone who sets foot on it, the island creates whatever they want, and if their heart is less than pure, the island turns them into a thematically appropriate animal as punishment. So the coachman doesn't have to build the amusement park -- the park just spontaneously comes into being when a boatload of rowdy boys shows up.
Corollary theory: the island is also giving the coachman what he wants -- a source of money. Because he stays on the outer edge of the island, he gets less exposure to its magic. But those smaller doses are building up over the many trips he's made...

I was going to make a crack that that means the Coachman is pure evil, but you covered that.
Could also explain those Shadow Creatures, if they transformed thanks to the island as well.

I've also heard a theory that the Coachman is the evil counterpart to the Blue Fairy; she rewards good kids, and he punishes the bad ones. It fits right in with the "Pleasure Island is magic" theory and explains why he looks like a demon in Corvus' avatar.

Maybe it's like the theater in Shakespeare's day, and all the female ostrich roles are played by male ostrich actors.
