Good Omens is a pretty good read. He co-authored it with Neil Gaiman, so you know you've got quality on your hands. The basic plot summary is that the Apocalypse is right around the corner... but the Antichrist accidentally got switched with another kid at birth and ended up being brought up like a normal boy, which basically throws the entire thing off the rails. Also, the Four Horsemen of the Apocalypse are now bikers. On the whole it's pretty hilarious and actually manages to offer some pretty interesting takes on theology. Then again, I might be a little bit biased, seeing as I literally wrote a thesis on the Book of Revelation once, so I found it fascinating how they put an interesting twist on the whole "end times" subject.
As for Discworld, I haven't read a lot of the books, but I've heard that Guards, Guards is a good place to start.
